Pan Seared Salmon Recipe

Even though it is one of the easiest foods to prepare, people are always afraid to cook fish.  Here’s a really simple Pan Seared Salmon recipe that is guaranteed to impress.

INGREDIENTS
2 4-6oz Wild Caught Salmon Fillets
2 Tbsp Olive Oil
1/2 tsp Ground Fennel
1/2 tsp Ground Coriander
Salt & Pepper
Lemon Juice

Place a medium size cast iron skillet or pan on high heat. Pat salmon fillets dry. Coat with olive oil. Season with salt, pepper, fennel and coriander. Once skillet is smoking hot, place fillets in meat side down. Cook for 3-4 minutes or until you see the sides of fillets have cooked half way up. Make sure you have a nice sear/browning on each fillet. Flip and lower temp to medium high heat. Cook another 4-5 minutes or until you reach desired temperature. Salmon is done when it flakes apart easily. Finish with a squeeze of lemon juice. Serve with roasted, grilled or sauteed vegetable from last months recipe.
